Jeannie Mai Inspired Cucumber Salad

While watching Jeannie Mai on Instagram I saw her make this Cucumber Salad and my imagination took off. This recipe is more freestyle because I feel it is almost impossible to make this wrong. Just trust yourself and taste as you go. Let me know what you think!
Ingredients
- 6 Radishes
- 1 Large Cucumber
- 1 Large Tomato
- 1 Purple/Red onion
- 1 Large Jalapeno
- Sesame Oil
- Sesame Seeds
- 1 Lime juiced
- Asian Vinaigrette Salad dressing
- Chile & Lime Seasoning
Step 1: Chop all the veggies to bite size chunks except the onions. Chop the onions small. and mix them all in a large bowl
Step 2: Sprinkle sesame oil lightly. Just enough to coat all of the veggies.
Step 3: Then add a generous amount of Asian Vinaigrette ad Chile & Lime seasoning. Taste sauce as you add to insure you get your desired heat level and flavor
Step 4: Then add lime juice and sesame seeds and stir Thoroughly
Step 5: Cover the bowl and let sit in the refrigerator for at minimum an hour but preferably a few hours.
This cucumber salad is so healthy and refreshing. It is a must have on a hot summer's day with a cup of lemonade. Every bite is an explosion of flavor. I hope you enjoy and comment below.
